- Season the inside of each trout with Dickey’s Caribbean Chipotle Barbecue Rub, rub the spice evenly inside the trout.
- Place 4 orange half moons and 3-4 springs of cilantro on top of the oranges. Use a large bamboo skewer pushed through the belly section to hold the fillets together.
- Rub the outside of the fillets with olive oil and sprinkle skin with salt.
- Heat grill to 400°F.
- Place trout on the grill and grill on each side for 5-6 minutes, keep the lid closed to cook the trout evenly.
