Red Skin Mashed Potato

Everyone loves tender, red potatoes, especially when they are smoked and mashed with butter, half and half, and our Foo Foo Powder and Jalapeño Rosemary Steak Seasoning. Potatoes are usually meant to be a side, but these are good enough to be the main course.

  • 3 lb
  • Red skin potato
  • small to medium
  • 1/2 cup
  • Unsalted butter
  • 1/2 cup
  • Half & half
  • 1/2 cup
  • Sour cream


  1. Preheat smoker to 275°. Place potatoes in a pan large enough to have a single layer and into the smoker.
  2. In a small sauce pan heat butter, half and half, Dickey’s Foo Foo Powder and Jalapeno Rosemary Steak Seasoning just until steaming and butter is melted. Let sour cream stand to come to room temperature.
  3. Once potatoes are knife tender, approx. 1 hr, place in mixing bowl. Slowly add milk butter mixture using a hand mixer to combine. You may also use a hand held potato masher. Combine to desired consistency.
  4. Once consistency is reached use a rubber spatula to fold in sour cream.
