Smoked Grapefruit Paloma

Ingredients

  • 1 ea
  • Grapefruit, sliced half moon 1/4 inch
  • 8 ea
  • Lime wedges
  • 4 tbsp
  • Simple syrup
  • 1/2 cup
  • Tequila
  • 1.5-2 cups
  • Soda water
  • 1 tsp
  • Salt, kosher
  • 1 tsp
  • Sugar, granulated
  • 4 ea
  • Lime wedge

Procedure

  1. Slice grapefruit into 1/4″ thick half moons. Smoke at 195°F for 20 minutes.
  2. Combine salt and sugar on a small plate. Rim glasses with lime and press into the sugar and salt mixture to rim glass.
  3. To make each drink, muddle 3 half moons of grapefruit with 2 lime wedges in a glass. Add 1 tablespoon simple syrup to the glass with 1 1/2 oz tequila.
  4. Add ice and top with soda water, stir and serve with lime wedge.
